Located at Rosemont’s Parkway Bank Park Entertainment District, the restaurant will feature a fusion of global-inspired, land and seaside fare including a dynamic Raw and Omakase Bar with a Mediterranean flair for a truly “fin-tastic” experience.

Located just 25 minutes from downtown Chicago, Saltwater Coastal is a production by Lyons Group Entertainment, a Boston-based hospitality company that knows its seafood. From freshly shucked Island Creek Oysters to an extensive selection of sushi, maki rolls, and daily grilled fish options, Saltwater Coastal takes its seafood seriously using the freshest ingredients to transport you to the sea, no travel required!

To prepare the freshest seafood, their custom-built “Fish Room” is a walk-in cooler specially designed for the cutting and preparation of the finest seafood available. Maintaining a constant temperature of 35 degrees, the optimal environment preserves the texture, flavor, and freshness of their seafood, allowing Chef Cruz Goler and his team of talented chefs to create the highest quality seafood dishes.

Start the evening with Mediterranean-style plates bursting with fresh flavors and vibrant colors. A few menu highlights include Crispy Haloumi Cheese with Aleppo-roasted carrots, olive oil, and naan, Whole Roasted Beets with tabbouleh salad and horseradish cream, and Whole Grilled Mediterranean Orata with spinach, green olives, fine herbs, and charred lemons. Saltwater Coastal also celebrates offerings from the sea with the Raw Bar – Fresh East Coast Oyster Selection, New England Cold Water Half Lobster with saffron aioli, Wild King Crab Legs with pimento mayo, and Seafood Towers. Tinned fish offerings include over twenty imported options, such as sardines, anchovies, tuna, salmon, and more.

Sushi classics and Omakase Bar will be executed by Master Sushi Chef Ichiro Hu featuring a selection of highest quality toro, shrimp, salmon, and a variety of fresh sashimi and sushi rolls. A few highlights include Pepper Tuna Tataki – pan-seared tuna with mixed greens and ponzu sauce, Summer Shack Roll – lobster, mango, and seared scallop with special sauce and Sushi Sandwich – spicy salmon, spicy tuna, and avocado on rice cracker with soy paper.

A full beverage program has been expertly curated by Lyons Group Mixologist Al Brown. Its robust cocktail program will feature classic cocktails, sangrias, tiki drinks, and more. Saltwater Coastal will also feature a popularly priced wine menu and a wide selection of draft and bottled beers.

Inside, the guests will be greeted with an environment that makes you feel that you just stumbled into a shoreside dining spot in Santorini or Veracruz. When the weather is fine, Saltwater Coastal will have 80 covered patio seats with fairy lights and soothing music to capture a great evening of al fresco dining.
